How to Make the Best Overnight Oats with Almond Milk

Overnight oats is a convenient breakfast meal. The name itself is pretty self explanatory as the process involves soaking rolled oats in a flavorful milk base overnight.

The result is a thick, creamy and almost pudding-like oatmeal that is delightful and satisfying.

The beauty of overnight oats is that you can customize it to your liking with delicious mix-ins and toppings. 

The best overnight oats are made using a 1:1 ratio of oats to liquid. So if you are using ½ cup of oats then use ½  cup of liquid (in this case almond milk).

This gives you a nice and thick consistency but feel free to add a bit more liquid if you prefer a looser consistency. 

In the event that you are mixing in other ingredients such as shredded apples in this recipe, then add a bit more liquid to make up the measurements.

Substitutions & Alternatives

This recipe is very easy to customize. Here are some suggestions for what can (and cannot) be substituted.

Oats

Rolled oats is the best option for overnight oats recipes since the oats have been steamed and flattened and will absorb the flavored liquid better and are more pleasant to eat raw. 

Steel cut oats and instant oatmeal won’t work for this recipe.

Chia Seeds

These black pepper-like seeds are an amazing superfood packed with omega-3 fatty acids. 

They expand when they come into contact with the liquid, and add extra creaminess and thickness to the recipe. 

You can also substitute with 1 Tbsp of ground flax seed.

Apple

This is a key ingredient since we are making Apple Pie spiced overnight oats, so don’t leave it out. 

Apple varieties such as gala, red delicious and fuji are perfect for this recipe since they are naturally sweet. 

Sour varieties like granny smith may work but won’t necessarily give you that natural sweetness.

Toppings 

When it comes to toppings, the opportunities are limitless. 

You can choose to go in the direction of the original recipe – in this case apple pie flavor – or you can choose complementary flavors that pair well with the original recipe. 

Fresh apples reinforce the apple pie flavors for this recipe, and a pinch of ground cinnamon would work too. 

However, toppings like cacao nibs, almond butter and even dried cranberries will work beautifully as complementary flavors.

How to Store Almond Milk Overnight Oats 

Overnight oats are often best enjoyed within 24 hours. 

However, you can store it in the refrigerator in an airtight container or mason jar where it will keep fresh for up to 3 days.

Description

This recipe for apple pie inspired almond milk overnight oats is a delicious and easy way to enjoy the flavors of a classic dessert in a healthy, grab-and-go breakfast.


Ingredients

  • 1 cup old fashioned oats
  • 1 cup shredded apple (use gala, red delicious or fuji apple)
  • 2 cups almond milk
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp chia seeds
  • 1 tsp cinnamon, ground
  • 1/8 tsp nutmeg, freshly ground
  • Pinch of salt

Instructions

  1. Add all of the ingredients to a small bowl and mix well to combine. Transfer the mixture to a mason jar or leave it in the bowl then cover tightly and place in the refrigerator for 8 hours to overnight.
  2. The following day, top the overnight oats with your favorite toppings (see blog for ideas) and serve.
