This recipe for apple pie inspired almond milk overnight oats is a delicious and easy way to enjoy the flavors of a classic dessert in a healthy, grab-and-go breakfast.

- 1 cup old fashioned oats
- 1 cup shredded apple (use gala, red delicious or fuji apple)
- 2 cups almond milk
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 2 tsp chia seeds
- 1 tsp cinnamon, ground
- 1/8 tsp nutmeg, freshly ground
- Pinch of salt
Instructions
- Add all of the ingredients to a small bowl and mix well to combine. Transfer the mixture to a mason jar or leave it in the bowl then cover tightly and place in the refrigerator for 8 hours to overnight.
- The following day, top the overnight oats with your favorite toppings (see blog for ideas) and serve.
