Description
This creamy dairy-free caesar dressing recipe goes great with any salad and uses plant-based milk!

- 3/4 cup full fat coconut milk (see substitutions and alternatives)
- 2 Tbsp nutritional yeast (optional)
- 2 tsp fresh lemon juice ~ 1/2 large lemon
- 2 cloves garlic, grated or finely minced
- 2 tsp capers, finely minced
- 2 tsp dijon mustard, whole grain
- 2–3 Tbsp neutral flavored oil, to thicken
- Salt and pepper to taste, start with a pinch of each
Instructions
- Add all of the ingredients to a small blender and process until smooth and creamy. Add a bit more coconut milk or water to thin if needed. Alternatively, you can add the ingredients to a bowl and whisk vigorously until incorporated. Pour over fresh greens and enjoy.
