Dairy-Free Creamed Spinach Recipe

Description

This dairy-free creamed spinach recipe is a great way to add fresh greens to your diet without milk or cheese. It’s easy to make and makes a great side-dish for any meal!


Ingredients

  • 3 Tbsp butter
  • 2 cloves garlic, minced
  • 2 cups full fat coconut milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg, freshly grated
  • 1 Tbsp nutritional yeast
  • 2 lbs frozen spinach, thawed and squeezed

Instructions

  1. Heat a skillet over medium heat and add the butter. Once melted, add the garlic and saute for 30 seconds – do not let it burn.
  2. Slowly pour in the coconut milk and stir. Season with salt, pepper, nutmeg, and nutritional yeast, then mix well.
  3. Reduce the heat to low and allow the sauce to simmer for 3 minutes until it has slightly thickened.
  4. Add in the spinach and stir to coat with the coconut milk sauce and allow it to simmer for an additional 10 minutes. Turn off the heat and serve.
